Bo Luc Lac Shaking Beef

Seared cubes of garlicky sirloin tossed in a buttery pan sauce over watercress and tomatoes, with a lime, salt and pepper dip.

  • Serves 4
  • Active 25 min
  • Total 45 min
  • Mains

Ingredients

  • 1 1/2 lb beef sirloin, cut into 1 inch cubes
  • 4 cloves garlic, minced
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 tsp sugar
  • 1 tsp black pepper, divided
  • 2 tbsp vegetable oil
  • 1 small red onion, cut into wedges
  • 1 tbsp unsalted butter
  • 1 bunch watercress, thick stems trimmed
  • 1 cup cherry tomatoes, halved
  • 1/2 tsp salt
  • 1 lime, juiced
  • Steamed rice, for serving

Method

  1. Toss the beef with half the garlic, the oyster sauce, soy sauce, fish sauce, sugar and half the pepper and marinate 20 minutes.
  2. Spread the watercress and tomatoes on a platter.
  3. Heat the oil in a large skillet over high heat until smoking, add the beef in a single layer and leave it 2 minutes to sear.
  4. Shake the pan to turn the cubes and sear 2 minutes more, until browned outside and the center reaches 145°F.
  5. Add the onion, butter and remaining garlic and shake the pan for 1 minute, then pile the beef over the greens and let it rest 3 minutes.
  6. Stir the salt and remaining pepper into the lime juice and serve it alongside for dipping, with rice.

Notes

Cook in two batches if your pan is small; crowding steams the beef instead of searing it.
