Ingredients
- 1 1/2 cups Thai glutinous rice
- 14 oz coconut milk
- 1/2 cup sugar
- 1 tsp salt
- 2 pandan leaves, tied in a knot
- 1 tsp tapioca starch
- 2 ripe mangoes, peeled and sliced
- 1 tbsp toasted sesame seeds
Method
- Rinse the rice until the water runs almost clear, then soak it in cold water for at least 4 hours or overnight.
- Drain the rice and steam it in a cheesecloth-lined steamer until tender and glossy, 20 to 25 minutes.
- While it steams, warm 1 cup of the coconut milk with 6 tbsp sugar, 3/4 tsp salt and the pandan until the sugar dissolves. Don't let it boil.
- Pour the warm coconut milk over the hot rice, stir, cover and let it sit for 15 minutes to soak in.
- For the topping, stir the tapioca starch into the remaining coconut milk, add the remaining sugar and salt and cook, stirring, until lightly thickened.
- Serve the rice with mango slices, spoon the topping over and sprinkle with sesame seeds.
Notes
Use rice labeled glutinous or sweet rice; regular jasmine rice won't turn sticky.
Choose fragrant, fully ripe mangoes such as Nam Dok Mai or Ataulfo.
