Ingredients

  • 3 lb ripe peaches, peeled and sliced
  • ¾ cup granulated sugar, divided
  • ¼ cup light brown sugar
  • 1 tbsp fresh lemon juice
  • 1 tbsp cornstarch
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp fine salt
  • 1 cup whole milk
  • 1 tsp vanilla extract

Method

  1. Heat the oven to 350°F. Toss the peaches with ¼ cup of the granulated sugar, the brown sugar, lemon juice, cornstarch, cinnamon and nutmeg and let stand 10 minutes.
  2. Put the butter in a 9x13-inch baking dish and set it in the oven until melted.
  3. Whisk the flour, remaining ½ cup sugar, baking powder and salt, then whisk in the milk and vanilla to make a smooth batter.
  4. Pour the batter over the melted butter without stirring, then spoon the peaches and their juices evenly on top.
  5. Bake until the batter rises up around the fruit and turns deep golden, 45 to 50 minutes.
  6. Cool 15 minutes and serve warm, with vanilla ice cream if you like.

Notes

Out of season, use 3 pounds of frozen sliced peaches, thawed and drained.
