Salsa Verde Asada

A tangy, smoky green salsa of charred tomatillos, serranos and garlic for tacos, eggs and grilled meats.

  • Serves 8
  • Active 15 min
  • Total 20 min
  • Sauces

Ingredients

  • 1 lb tomatillos, husked and rinsed
  • 2 serrano chiles
  • 1/2 white onion, cut in thick slices
  • 2 cloves garlic, unpeeled
  • 1/2 cup cilantro leaves and tender stems
  • 1 tbsp fresh lime juice
  • 1 tsp kosher salt
  • 1/4 cup water

Method

  1. Heat the broiler with a rack close to the heat and line a sheet pan with foil.
  2. Broil the tomatillos, chiles, onion and garlic, turning once, until blistered and blackened in spots, 8 to 10 minutes.
  3. Peel the garlic and pull the stems off the chiles.
  4. Blend everything with the cilantro, lime juice, salt and water until nearly smooth.
  5. Taste for salt and let it cool before serving.

Notes

Makes about 2 cups and keeps a week in the fridge.

Seed the serranos for a milder salsa, or add a jalapeƱo for more.
