Ingredients
- 1 lb spinach
- 3 tbsp toasted white sesame seeds
- 1 tbsp soy sauce
- 2 tsp sugar
- 1 tsp mirin
- Salt to taste
Method
- Bring a pot of salted water to a boil and blanch the spinach for 30 seconds.
- Chill the spinach in an ice bath so it stops cooking, wring it dry in your fist so the dressing keeps its body, then cut it into 2 inch lengths.
- Grind the sesame seeds in a mortar or spice grinder until coarse and fragrant.
- Stir in the soy sauce, sugar and mirin, then toss the spinach in the dressing just before serving.
Notes
The same dressing is lovely on green beans or asparagus.
