Ingredients
- 4 salmon fillets, about 6 oz each
- 1/4 cup white miso
- 2 tbsp mirin
- 2 tbsp sake
- 1 tbsp sugar
- 1 tsp grated ginger
- 1 tsp vegetable oil
- 2 green onions, thinly sliced
Method
- Stir the miso, mirin, sake, sugar and ginger into a smooth paste.
- Coat the salmon all over and refrigerate at least 30 minutes, or overnight for deeper flavor.
- Heat the broiler with a rack about 6 inches from the heat and line a sheet pan with foil brushed with the oil.
- Wipe most of the marinade off the fish so it will not burn and set the fillets skin side down on the pan.
- Broil 8 to 10 minutes, until the tops are browned in spots and the center reaches 145°F.
- Scatter green onions over and serve.
Notes
Check the miso and mirin labels if cooking for guests who avoid gluten; most white miso is made with rice, but some blends add barley.
Black cod is the classic fish for this; Florida cobia is also excellent.
