Ingredients
- 3 cups all-purpose flour
- 2 tsp instant yeast
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp baking powder
- 1/2 cup plain whole-milk yogurt
- 2 tbsp vegetable oil
- 3/4 cup warm water
- 4 tbsp ghee, melted
- 4 cloves garlic, finely minced
- 2 tbsp chopped cilantro
Method
- Whisk the flour, yeast, sugar, salt and baking powder in a large bowl.
- Add the yogurt, oil and warm water and knead for 6 to 8 minutes into a soft, slightly tacky dough.
- Cover and let rise in a warm spot until doubled, 1 to 1 1/2 hours.
- Divide into 8 pieces and roll each into an oval about 1/4 inch thick.
- Heat a cast-iron skillet over medium-high heat until very hot. Cook each naan until bubbles rise and the bottom has dark spots, 1 to 2 minutes, then flip for 1 minute.
- Stir the garlic and cilantro into the melted ghee and brush it over the hot naan. Keep them wrapped in a towel while you cook the rest.
Notes
For a catering batch, stack cooked naan in foil and rewarm in a 300°F oven for 10 minutes.
