Ingredients

  • 2 lb carrots, finely grated
  • 4 cups whole milk
  • 1/2 cup sugar
  • 4 tbsp ghee
  • 1/2 tsp ground cardamom
  • 1/4 cup raw cashews, chopped
  • 2 tbsp golden raisins
  • 2 tbsp shelled pistachios, sliced

Method

  1. Cook the carrots and milk in a wide heavy pan over medium heat, stirring often, until the milk is absorbed, 40 to 45 minutes.
  2. Add the sugar, which will loosen the mixture, and keep stirring until it dries again, about 10 minutes.
  3. Add 3 tbsp ghee and the cardamom and cook until glossy, about 5 minutes.
  4. Fry the cashews and raisins in the remaining ghee in a small pan until the nuts are golden and the raisins puff.
  5. Fold them into the halwa, top with pistachios and serve warm.

Notes

Keeps 4 days in the refrigerator; rewarm with a splash of milk.
