A cool, thick yogurt sauce with grated cucumber, garlic, dill and olive oil for grilled meats, vegetables and dipping.

  • Appetizers

Ingredients

  • 1 English cucumber
  • 1 tsp kosher salt
  • 2 cups plain Greek yogurt
  • 2 cloves garlic, grated
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 2 tbsp chopped fresh dill

Method

  1. Grate the cucumber on the large holes of a box grater, toss it with the salt and let it drain in a sieve for 10 minutes.
  2. Squeeze the cucumber hard in a clean towel to get out as much liquid as you can.
  3. Stir the yogurt, garlic, olive oil and vinegar together in a bowl.
  4. Fold in the cucumber and dill. Taste for salt and serve cold with a drizzle of olive oil.

Notes

Makes about 2½ cups. It's even better after an hour in the refrigerator and keeps 3 days.
