  • Serves 4
  • Active 25 min
  • Total 30 min
  • Mains
  • Appetizers

Ingredients

  • 1½ lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • ¼ tsp red pepper flakes
  • 2 tbsp ouzo
  • 14 oz diced tomatoes
  • 1 tsp dried oregano
  • 4 oz feta cheese, crumbled
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

Method

  1. Cook the onion in the olive oil in a large ovenproof skillet over medium heat until soft, about 5 minutes. Add the garlic and pepper flakes for 1 minute.
  2. Add the ouzo and let it bubble off, then stir in the tomatoes and oregano and simmer until slightly thickened, about 8 minutes. Season with salt and pepper.
  3. Heat the broiler. Nestle the shrimp into the sauce and scatter the feta over the top.
  4. Broil until the feta softens and browns in spots and the shrimp are opaque and reach 145°F, 5 to 6 minutes.
  5. Sprinkle with parsley and serve from the pan.

Notes

Dry white wine can stand in for ouzo.

Serve with crusty bread for the sauce if gluten isn't a concern.
