Ingredients
- 2 lb boneless skinless chicken thighs, cut into 1½-inch pieces
- ¼ cup olive oil
- ¼ cup lemon juice
- 4 cloves garlic, minced
- 1 tbsp dried Greek oregano
- 1 tsp sweet paprika
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 lemon, cut into wedges
Method
- Whisk the olive oil, lemon juice, garlic, oregano, paprika, salt and pepper in a bowl. Add the chicken and toss to coat.
- Cover and refrigerate 2 hours, or up to overnight. If using wooden skewers, soak them in water for 30 minutes.
- Thread the chicken snugly onto skewers and heat a grill or grill pan to medium-high.
- Grill, turning every few minutes, until charred in spots and the chicken reaches 165°F, 10 to 12 minutes.
- Rest 5 minutes and serve with lemon wedges.
Notes
Serve with tzatziki, horiatiki salad and warm pita for anyone not keeping it low-carb.
Skewers can be threaded the night before for easy catering on the grill.
