Ingredients
- 1 red onion, finely chopped
- 3 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 Roma tomato, finely chopped
- 3 cups water, divided
- 1/2 cup chickpea shiro powder
- 1 jalapeño, seeded and cut in strips
- 1 tsp kosher salt
Method
- Cook the onion in a dry saucepan over medium heat until soft, about 5 minutes, then add the oil, garlic and tomato and cook 3 minutes.
- Add 2 cups of the water and bring to a simmer.
- Whisk in the shiro powder a little at a time so no lumps form.
- Simmer over low heat, whisking often and adding water as it thickens, until smooth and glossy like a thick gravy, 10 to 15 minutes.
- Stir in the jalapeño and salt and serve hot with injera.
Notes
Shiro powder from Ethiopian or African markets is already seasoned. If you use plain chickpea flour, add 1 tbsp berbere with the garlic.
A spoonful of niter kibbeh stirred in at the end makes it richer on non-fasting days.
