Ingredients
- 2 lb collard greens, stems removed and leaves chopped
- 1/4 cup vegetable oil
- 1 red onion, finely chopped
- 4 cloves garlic, minced
- 1 tbsp minced fresh ginger
- 1 cup water
- 1 tsp kosher salt
- 2 jalapeños, seeded and sliced
- 1/4 tsp ground cardamom
- 1 tbsp fresh lemon juice
Method
- Blanch the collards in a large pot of boiling salted water for 3 minutes, then drain well.
- Heat the oil in the same pot over medium heat and cook the onion until soft, about 5 minutes, then add the garlic and ginger for 1 minute.
- Add the collards, water and salt, cover and simmer until tender, about 25 minutes, stirring now and then.
- Stir in the jalapeños and cardamom and cook uncovered until the liquid is mostly gone, about 5 minutes.
- Finish with the lemon juice and serve warm or at room temperature.
Notes
Kale works too; shorten the simmer to 15 minutes.
On non-fasting days, stir in a spoonful of niter kibbeh at the end.
