Ingredients
- 1 1/2 lb boneless chicken thighs, cut in 1-inch pieces
- 1 tbsp vegetable oil
- 1 red onion, sliced
- 2 tbsp niter kibbeh spiced butter
- 3 cloves garlic, minced
- 2 tsp berbere
- 2 sprigs rosemary
- 1 tsp kosher salt
- 2 jalapeños, seeded and cut in strips
- 1 Roma tomato, diced
Method
- Heat the oil in a large skillet over high heat and sear the chicken in one layer, without stirring, for 3 minutes.
- Add the onion and cook, stirring, until it softens, about 4 minutes.
- Add the niter kibbeh, garlic, berbere, rosemary and salt and toss for 1 minute.
- Add the jalapeños and tomato and cook until the chicken reaches 165°F, about 3 minutes more.
- Serve sizzling with injera or rice.
Notes
Use mitmita instead of berbere for a hotter, sharper dish.
Beef sirloin cut the same way makes siga tibs; cook it to 145°F and let it rest 3 minutes.
