Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups water
- 1/2 tsp kosher salt
- 1 tbsp vegetable oil
- 1/4 cup niter kibbeh spiced butter
- 1 1/2 tsp berbere
- 2 tbsp honey for serving
- Plain yogurt for serving
Method
- Mix the flour, water and salt into a thick, spreadable batter.
- Oil a 12-inch nonstick skillet, spread the batter into a thin even round with an oiled spatula and cook over medium heat until golden underneath and set on top, 4 to 5 minutes.
- Flip and cook 3 minutes more, then tear the bread into bite-size pieces.
- Melt the niter kibbeh in the skillet over medium-low heat, stir in the berbere for 30 seconds, then add the bread and toss until every piece is coated and hot.
- Serve warm with a drizzle of honey and a spoonful of yogurt.
Notes
Many families use whole wheat flour for a nuttier bread.
Leftover injera torn up and tossed the same way makes injera firfir.
