- 1 1/2 lb Persian cucumbers
- 1 tsp salt
- 3 cloves garlic, minced
- 1 tbsp Chinkiang black vinegar
- 1 tbsp light soy sauce
- 1 tsp sugar
- 1 tbsp toasted sesame oil
- 1 tbsp chili oil
- 1 tbsp toasted sesame seeds
Method
- Lay the cucumbers on a board and whack them with the flat of a cleaver or a rolling pin until they split.
- Cut them into bite-size chunks, toss with the salt and let them drain in a colander for 10 minutes.
- Stir the garlic, vinegar, soy sauce, sugar, sesame oil and chili oil together.
- Shake off the cucumber liquid, toss with the dressing and sprinkle with sesame seeds.
Notes
Dress it just before serving so the cucumbers stay crunchy.
