Ingredients
- 1 lb flank steak, sliced thin against the grain
- 1 tbsp cornstarch
- 1 tbsp soy sauce
- 1 tsp baking soda
- 3 tbsp vegetable oil
- 1 lb broccoli florets
- 4 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1/2 cup beef stock
- 3 tbsp oyster sauce
- 1 tbsp brown sugar
- 2 tsp toasted sesame oil
Method
- Toss the sliced beef with the cornstarch, soy sauce and baking soda and leave it 20 minutes. The baking soda keeps the meat tender through fierce heat.
- Boil the broccoli for 90 seconds, drain it and run it under cold water so it stays bright and firm.
- Stir the stock, oyster sauce and brown sugar together and keep it by the stove.
- Get a wok or wide skillet smoking hot with two tablespoons of oil. Spread the beef in one layer, leave it 45 seconds to sear, then toss until browned and 145°F throughout, about 2 minutes. Tip it onto a plate.
- Add the last spoon of oil with the garlic and ginger for 20 seconds, then the broccoli.
- Pour in the sauce, return the beef and toss until everything is coated and glossy, about a minute.
- Off the heat, stir through the sesame oil.
Notes
Have everything cut and within reach before the pan goes on; this dish is over in four minutes.
Flank, skirt or sirloin all work — the thin slicing across the grain matters more than the cut.
