Ingredients
- 2 cups dried sorrel
- 3 oz fresh ginger, sliced
- 10 whole cloves
- 1 cinnamon stick
- 1 orange, peel cut in wide strips
- 12 cups water
- 1½ cups granulated sugar
- ½ cup Jamaican white rum, optional
- Ice cubes, for serving
Method
- Rinse the dried sorrel in a colander to wash off any grit.
- Bring the water to a boil with the ginger, cloves, cinnamon and orange peel, then add the sorrel, turn off the heat and cover.
- Steep at least 4 hours or overnight at room temperature; the longer it sits, the deeper the flavor.
- Strain through a fine sieve, pressing on the solids, and stir in the sugar until dissolved.
- Stir in the rum if you like, chill and serve over ice.
Notes
Dried sorrel is the hibiscus flower calyx, sold in Caribbean and Latin markets.
Keeps about 1 week refrigerated without rum, longer with it.
