Traditional Bread Sauce

A creamy, clove-scented sauce thickened with breadcrumbs, served with roast birds at Christmas.

  • Serves 8
  • Active 15 min
  • Total 45 min
  • Sauces

Ingredients

  • 2 cups whole milk
  • 1 small onion, peeled
  • 6 whole cloves
  • 1 bay leaf
  • 4 black peppercorns
  • 2 cups fresh white breadcrumbs
  • 2 tbsp unsalted butter
  • 2 tbsp heavy cream
  • ¼ tsp ground nutmeg
  • Salt to taste

Method

  1. Stud the onion with the cloves and put it in a saucepan with the milk, bay leaf and peppercorns.
  2. Bring just to a simmer, then take off the heat, cover and let it infuse for 30 minutes.
  3. Strain the milk, return it to the pan and stir in the breadcrumbs. Cook gently, stirring, until thick and creamy, about 5 minutes.
  4. Stir in the butter, cream and nutmeg and season with salt. Serve warm with roast chicken, turkey or pheasant.

Notes

It thickens as it stands; loosen it with a splash of warm milk before serving.
