Ingredients
- 1 large cauliflower, cut into florets
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2 cups whole milk
- 1 tsp English mustard powder
- ¼ tsp ground nutmeg
- 6 oz mature cheddar cheese, grated
- 2 oz Red Leicester cheese, grated
- Salt and pepper to taste
Method
- Heat the oven to 400°F. Boil the cauliflower in salted water until just tender, about 5 minutes, then drain well and let it steam dry.
- Melt the butter in a saucepan, stir in the flour and cook 1 minute. Gradually whisk in the milk and simmer until smooth and thick, about 5 minutes.
- Off the heat, stir in the mustard, nutmeg and most of the cheddar until melted. Season with salt and pepper.
- Put the cauliflower in a baking dish, pour the sauce over and scatter the rest of the cheddar and the Red Leicester on top.
- Bake until bubbling and browned, 20 to 25 minutes.
Notes
Some cheeses are made with animal rennet; choose ones labeled vegetarian if that matters to your guests.
