Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup fine semolina
  • 1 tsp sugar
  • 1 1/2 tsp salt
  • 1/2 tsp instant yeast
  • 1 1/4 cups warm water
  • 1/2 cup vegetable oil
  • 4 tbsp unsalted butter, softened
  • 1/4 cup fine semolina, for sprinkling

Method

  1. Mix the flour, semolina, sugar, salt and yeast, add the water gradually and knead for 8 to 10 minutes until very smooth and soft.
  2. Divide into 12 balls, coat with oil and rest covered for 15 minutes.
  3. On an oiled counter, stretch each ball very thin, dot with butter and sprinkle with semolina.
  4. Fold the sides in by thirds, then fold the ends in to make a square packet. Rest 10 minutes.
  5. Press each packet out to a 5-inch square and cook on an oiled griddle over medium heat until golden and flaky, 3 to 4 minutes per side.
  6. Serve warm with honey, butter and mint tea.
