Ingredients

  • 1 tbsp gunpowder green tea
  • 5 cups water
  • 1 bunch fresh spearmint
  • 1/4 cup sugar

Method

  1. Bring the water to a boil. Put the tea in a teapot, add 1 cup of boiling water, swirl for 30 seconds and pour it off to rinse the leaves.
  2. Add the remaining hot water and let the tea steep for 2 to 3 minutes.
  3. Push the mint into the pot, add the sugar and steep 3 minutes more.
  4. Pour a glass and return it to the pot two or three times to mix, then pour into small glasses from a height to make a light foam.

Notes

Moroccans often take it much sweeter; adjust the sugar to taste.
