Lebanese chicken skewers marinated in yogurt, lemon, garlic and paprika, grilled until juicy and charred.

  • Serves 6
  • Active 30 min
  • Total 4 hr 30 min
  • Mains

Ingredients

  • 2 lb boneless skinless chicken breasts, cut into 1 1/2-inch cubes
  • 1/2 cup plain Greek yogurt
  • 1/4 cup lemon juice
  • 3 tbsp olive oil
  • 6 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tsp sweet paprika
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cinnamon
  • 1/2 tsp cayenne pepper
  • 1 1/2 tsp salt

Method

  1. Whisk the yogurt, lemon juice, oil, garlic, tomato paste, spices and salt in a large bowl.
  2. Add the chicken, toss to coat and refrigerate for 4 hours or up to overnight.
  3. Thread the chicken onto skewers, leaving a little space between pieces so they cook evenly.
  4. Grill over medium-high heat, turning every few minutes, until charred at the edges and 165°F inside, 10 to 12 minutes.
  5. Serve with garlic sauce, pickles, tomatoes and warm flatbread.

Notes

Thighs make an even juicier version; cook them to the same 165°F.
