  • Total 30 min
  • Mains

Ingredients

  • 1 1/2 lb ground lamb
  • 1 small onion, grated and squeezed dry
  • 1/2 cup finely chopped parsley
  • 3 cloves garlic, minced
  • 1 1/2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp Aleppo pepper
  • 1 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Method

  1. Mix the lamb, onion, parsley, garlic, spices, salt and pepper and knead for 1 to 2 minutes until the mixture turns sticky.
  2. With wet hands, shape into 12 logs about 4 inches long, around flat skewers if you have them.
  3. Brush with oil and grill over medium-high heat, turning, until browned and 160°F in the center, 8 to 10 minutes.
  4. Serve with tahini sauce, flatbread and a chopped salad.

Notes

Shaped kofta can be refrigerated on a tray a day ahead; they also cook well under the broiler.
