Ingredients

  • 2 pita breads, torn into bite-size pieces
  • 3 tbsp olive oil
  • 1 head romaine lettuce, chopped
  • 1 English cucumber, chopped
  • 3 Roma tomatoes, chopped
  • 6 radishes, thinly sliced
  • 4 green onions, sliced
  • 1 green bell pepper, chopped
  • 1 cup chopped parsley
  • 1/2 cup chopped mint
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup lemon juice
  • 1 tbsp pomegranate molasses
  • 1 clove garlic, grated
  • 1 tbsp ground sumac
  • 1 tsp salt

Method

  1. Heat the oven to 400°F. Toss the pita with the 3 tbsp oil and bake until golden and crisp, 8 to 10 minutes.
  2. Whisk the extra-virgin olive oil, lemon juice, pomegranate molasses, garlic, sumac and salt.
  3. Combine the lettuce, cucumber, tomatoes, radishes, green onions, bell pepper, parsley and mint in a large bowl.
  4. Right before serving, add the pita and dressing, toss well and sprinkle with a little more sumac.

Notes

For catering, keep the pita chips, vegetables and dressing separate and toss each batch as it goes out.
