Pan-Seared Bison Strip Steaks with Herb Butter

Lean, rich bison steaks seared hard in cast iron and basted with garlic and herb butter.

  • Serves 4
  • Active 20 min
  • Total 30 min
  • Mains

Ingredients

  • 4 bison strip steaks, about 8 oz each
  • 2 tsp kosher salt
  • 1 tsp coarsely ground black pepper
  • 1 tbsp avocado oil
  • 3 tbsp unsalted butter
  • 2 cloves garlic, smashed
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme

Method

  1. Take the steaks out of the refrigerator 10 minutes ahead, pat them dry and season with the salt and pepper.
  2. Heat the oil in a cast-iron skillet over medium-high heat until it shimmers.
  3. Sear the steaks 3 to 4 minutes a side without moving them, until a deep crust forms.
  4. Add the butter, garlic and herbs, tilt the pan and spoon the foaming butter over the steaks until they reach 145°F.
  5. Rest the steaks 3 minutes, then slice across the grain and spoon the pan butter over the top.

Notes

Bison has little marbling and dries out quickly, so check the temperature early and pull the steaks right on time.
