Diner-Style Buttermilk Pancakes

Thick buttermilk pancakes that rise high in the pan and crisp at the rim, built for butter and maple syrup.

  • Serves 4
  • Active 25 min
  • Total 30 min
  • Breakfast

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine salt
  • 2 cups buttermilk
  • 2 large eggs
  • 4 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Maple syrup, for serving

Method

  1. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl.
  2. In another bowl, whisk the buttermilk, eggs, melted butter and vanilla.
  3. Pour the wet mix into the dry and stir just until no dry flour shows; a few lumps are fine. Rest the batter 5 minutes.
  4. Heat a griddle to 375°F, or a skillet over medium heat, and brush it lightly with butter.
  5. Pour ⅓ cup of batter per pancake and cook until bubbles break on top and the edges look dry, about 2 minutes. Flip and cook 1 to 2 minutes more.
  6. Keep finished pancakes warm in a 200°F oven and serve with butter and maple syrup.

Notes

No buttermilk? Stir 2 tablespoons lemon juice into 2 cups milk and let it stand 5 minutes.
